Gladys Saucedo

I am a registered dietitian based out of Las Vegas, blending two different fields of nutrition in my work.


Food & nutrition plays such an important role in our lives, in multiple aspects. Guiding my patients and clients to manage their nutrition through various phases of life, while honoring their needs, is my goal as a dietitian.

In the clinical field I specialize in organ transplant nutrition, working with patients before and after transplant. Organ transplantation provides a new lease on life, and it is a privilege to work alongside a world-class multidisciplinary team to give patients back their quality of life. I strive to guide my patients through a transition where their nutrition requirements and goals can change drastically, and to nourish their bodies after recovery to support their new lifestyle.



Being a proud Latina, and first generation Mexican-American my culture is very important to me. This has shaped me as a person and dietitian, and I will forever love the foods that connect me to my homeland. Outside of the clinical setting, I work with Latinas to help them re-connect with their cultural foods. Reminding ourselves how to nourish both our body and soul with our culture, Unlearning the harmful narratives surrounding our cultural foods and learning how to thrive with our foods.

I obtained my bachelor's degree from the University of Nevada Las Vegas, and proceeded to complete my dietetic internship from the same university. I still reside in Las Vegas and love the diversity and energy this city brings!
